HOW DO I MAKE MY WEIGHT WATCHERS DOUBLE CHOCOLATE CHIP MUFFINS?

  • Preheat oven to 350 degrees.
  • Mix together the flour, cocoa powder, sugar substitute, baking powder, and baking soda in a large mixing bowl then add 8 Tbsp no sugar added chocolate chips.
  • In another mixing bowl mix together unsweetened almond milk or skim milk.
  • Whisk well eggs with vanilla extract, and unsweetened applesauce.
  • Then I gradually combine the wet mixture into the dry ingredients and I stir until JUST combined.
  • Now just fill the muffin liners evenly with batter and sprinkle the remaining chocolate chips on top of each muffin.
  • Bake your muffins for 15-17 minutes.

COOK TIME: 15 minutes
ADDITIONAL TIME: 3 minutes
