Mexican food IS MY WEAKNESS! I love Mexican food But, it is not diet-friendly. With all that rice and ooey-gooey things smothered in cheese are no longer a problem because I have found these Weight Watchers Enchiladas Recipe just 3 PersonalPoints each serving, I can have two and not feel bad about anything! And you can too!

Weight Watchers Enchiladas Recipe

You can easily double or triple this recipe for your family and to be honest, they would never know it is Weight Watchers approved Until you tell them! It is really that good.

HOW DO I MAKE MY ENCHILADAS?

  • Preheat oven to 350 degrees
  • Spray 8×8 in a dish with cooking spray
  • Mix 2 oz of cheese in a small bowl, 2 tbsp enchilada sauce, and refried beans until combined thoroughly
  • Then spread two spoonfuls of enchilada sauce in the bottom of the baking dish
  • Pour the bean mixture in the middle of each tortilla and roll tightly, place each on the baking dish, then fold side down
  • Use remaining enchilada sauce over the tortillas and sprinkle with leftover cheese
  • Bake the dish for 20 minutes and cover it with tin foil
  • Finally, remove foil and bake another 5 minutes or until cheese is melted

Feel free to add all the white meat chicken OR even turkey breast you would like because that chicken is ZERO points– for an even more hearty meal and enjoy!
