PREP TIME: 5 minutes
COOK TIME: 15 minutes
ADDITIONAL TIME: 3 minutes
TOTAL TIME: 23 minutes

INGREDIENTS:
- Well, you’ll need 1 1/2 cup KODIAK CAKES PROTEIN PANCAKE POWER CAKES, FLAPJACK AND WAFFLE BAKING MIX
- 1 tsp baking powder
- 1/2 cup unsweetened applesauce
- And 1/2 cup water depending on the batter consistency
- For sugar substitute, you’ll need 1/4 cup of LAKANTO CLASSIC MONKFRUIT SWEETENER
- 1 large egg
- 1 cup fresh blueberries
DIRECTIONS:
- Preheat oven to 350 degrees.
- Then combine egg, water, applesauce & sugar substitute in a large mixing bowl.
- Add Kodiak pancake mix/protein powder and baking powder and mix well.
- Then add fresh blueberries.
- The muffin tin should be sprayed with nonstick cooking spray before pouring into the mixture.
- Then bake the muffin for 15-18 minutes.

NOTES:
- I prefer using either foil muffin liners or spray the muffin tin with non-stick cooking spray. If the muffin liners do not cool completely, they tend to stick to the dough.
- The sugar substitute Lakanto Monkfruit Sweetener that I used in this recipe is zero points.
- I can store it in an airtight container for up to a week or more.
- Enjoy!
